         Fried Chicken Livers with Thyme, Garlic and Leek








Another great meal, taken from a great website containing heaps of information and yummy recipes called Eat Drink Paleo. Today I tried in out and nom nom if you like a great tasting meal this is one to try. Great way to get the kids eating liver.

INGREDIENTS:

450 g Chicken Livers
1 Leek, sliced and washed
2 tbsp extra virgin Olive oil
1 tbsp sweet Balsamic
3 gloves garlic
8-10 sprigs thyme
2 1/2 tbsp butter
20 mil Sherry/Port ( I used whiskey)

INSTRUCTIONS:


  1. Wash the livers, pat dry and sprinkle with salt & pepper
  2. Pan fry leeks on medium heat in the olive oil and a pinch of salt & pepper, until soft and golden brown (4-5 mins). Drizzle with the Balsamic, mix and set aside.
  3. In clean frying pan heat butter until hot and add the garlic and thyme, remove once golden.
  4. Add the livers and fry for 2.5 mins each side. Finally add the Sherry/Port to deglaze then add the leeks and turn off.

                   PALEO SCOTCH EGG





I got this recipe from the website Mark's Daily Apple and loved how it was a Paleo Scotch Egg. So today my daughter & I decided to get it done.

INGREDIENTS (I used)

4 hard boiled eggs
2 tablespoons olive oil
Small onion finely chopped
1/2 lb (226 g) beef mince
1 lb (453 g) pork mince
Masterfoods mixed herbs
Masterfoods mixed spice
Salt & pepper
1 raw egg

INSTRUCTIONS:


  • Pre heat oven to 163 deg C 
  • Heat oil over medium heat and saute onion until soft.
  • In a large bowl combine onion with other ingredients add raw egg and mix well with hands.

  • Separate meat into 4 even portions roll each portion into a ball then flatten into thin patty. Put a boiled egg in middle and fold meat over the egg and shape with hands until egg is hidden.












  • Bake uncovered for 35 mins
  • Remove and rest for 10 mins.



On the website it says serves 4 but I would even stretch it to 6-8 as they are filling. I hope you try and enjoy :)
